Ingredients:

  • Roasted whole chicken, shredded
  • 3 kiwis, peeled, halved, and sliced
  • 1 spring onion, sliced, or 4 spring garlic
  • 100g (3 1/2 oz) watercress or spinach
  • 25g (1 oz) toasted cashews
  • 1 red chili, thinly sliced

For the Dressing:

  • Juice of 2 limes
  • 1 teaspoon grated ginger
  • ½ garlic clove, crushed
  • 30ml (2 tablespoons) water
  • 15ml (1 tablespoon) soy sauce or fish sauce
  • 1 tablespoon sugar

Instructions:

  1. Place the shredded chicken, kiwi slices, spring onions, and watercress or spinach in a large bowl or salad platter. Sprinkle the toasted cashews and sliced red chili on top.

  2. Mix the dressing ingredients in a small bowl until the sugar is completely dissolved. Pour the dressing over the salad just before serving.
